Greek Salad


Ingredients:


  • 1-1/3 cups spinach leaves, washed and torn into pieces, tough stems discarded;

  • 1/2 lb. packaged salad;

  • 1-1/4 tomatoes, cut into wedges;

  • 3/4 cucumber, peeled and thinly sliced;

  • 3/4 red bell pepper, seeded and thinly sliced ;

  • 3 ounces pitted black olives, thinly sliced;

  • 3 ounces feta cheese, crumbled;

  • 1/2 cup Italian dressing;

  • 3/4 cup plus 1 Tbs. croutons.

Instruction:


Combine first 7 ingredients in a salad bowl and toss. Pour dressing over salad just before serving. Season with salt and pepper to taste and toss. Serve with croutons.
